THE SUNNYSIDE baked egg + broccoli greens


"Guten Morgen Sonnenschein! Wie schön dass du geboren bist." I can't tell you how many times I stood in our kitchen, watching my friend Denise make a fried egg sandwich. This one's for you, my one and only Ginger. 

I don't have anything else to say today. Enjoy your friends. Enjoy the sunshine together. Go out on the rooftop. Don't shy away from a heart-to-heart. You have more to gain than you stand to loose. And eat cheerful looking food.



The hommage:
bread (Queen St Gluten Free Bakery white bean and millet seed)
sunnyside roast egg (organic/free range)
caramelized onion cheddar
Chinese broccoli leaves
raw onion
bergamot jelly
raw creamed wildflower honey
rosemary
organic butter
Himalayan salt
ground pepper
maple syrup


A view of the bergamot jelly. Definitely an impulse purchase from my local cafe, but it's so neat. It adds a really... 'woodsy' taste to things. Kind of like thyme, or twigs. But in a good way.


The honey. I eat everything with honey, it would seem. I never eat salty without the sweet.


Raw onion for that kick.


The cheese because it's so cute and fancy looking.


Chinese broccoli greens. In leu of spinach. They stand up better to heat when you grill this, and taste better.


The egg! I roast this in the oven at 400 for maybe 10 mins. With some butter underneath, salt and pepper on top. You can do it in a pan. Whatevs. Oh right, actually, take the egg OFF the sandwich now, you don't want to smoosh it, and have it cook more when you grill the sandwich.


Mix together the butter and chopped rosemary, spread on bread.


Ok, it's fried, add back in the egg. Cut in half. You ready for the reveal?


Ohhh. Baby.

Egg, toast, what more could one want in a breakfast?
