I got a snapper...Hey Wayne, thanks for the comment! I got a snapper fillet from my local fish monger. I cut it in half ('cause it was huge), and used the thick part for the sandwich. I dipped it in one egg (mixed), and then dipped it in flour (I use the gluten-free mix mentioned above). I fried it for a few minutes per side on medium-high, in lots of butter. I hope that helps?
